Kusum Rolls

Kusum's holds a special place in Kolkata's food history as one of the shops credited with creating the kathi roll. The paratha is cooked fresh on a griddle, layered with egg and folded around a filling of tender mutton or chicken, then wrapped tightly in paper. The queue outside often stretches onto the street, especially in the evenings, a sign of how loyal its regulars remain even after decades in business.
